										<content:encoded><![CDATA[<p style="text-align: left;">While we might not get a whole load of hot, sunny days in the North, when we do, the temptation to indulge in a lovely iced treat is always strong. That’s why this ice cream is the perfect solution. Creamy and cooling, this dish is the perfect summer sweet, especially since you can add any flavouring to it that you fancy. I’ve included my favourite here but if you aren’t a chocolatey person, you can leave out the Nutella and replace with fruit of your choice. My favourite additions are strawberries or raspberries and white chocolate chips.</p>

<p>2 tbsp Nutella</p>
<p>4 x waffle cones</p>
<p>4 x wafer curls</p>
<p>4 x tsp toffee sauce</p>

<b>Method </b></p>
<ol>
<li>Pop the sliced bananas on a plate, cover in foil and put in the freezer for at least an hour or better overnight.</li>
<li>Once frozen, pop the bananas in a food processor and churn. Keep going and they will turn into the loveliest creamy ice cream.</li>
<li>Add the Nutella, combine well and pop into a container.</li>
<li>Put back into the freezer for half an hour to firm up.</li>
<li>Once firm, scoop a nice ball of ice cream onto a cone, push in a curl and top with 1 teaspoon of toffee sauce per person.</li>

										<content:encoded><![CDATA[<p>I got a &#8216;Four in One&#8217; grill of my OH&#8217;s Mam a long time ago and so this morning when I went to make banana pancakes I thought &#8216;I wonder if they would work in the waffle maker?&#8217; and what do you know, they did!!</p>
<p>If you don&#8217;t have a waffle maker you could use the same mixture to make pancakes. Just pop the mixture in a pancake shape into a hot frying pan sprayed with 1kal, cook, flip, cook and serve!</p>

<p>Either way is a great option to satisfy your sweet tooth without being naughty and they are so quick and simple to make.</p>
<p><strong>Ingredients</strong></p>
<p><em>Makes 2 waffles = 0sp (Flex)</em></p>
<p>1 banana, mashed</p>
<p>2 eggs, beaten</p>
<p>1/4 tsp cinnamon</p>
<p>1 tbsp fat free natural yoghurt</p>
<p>Spoonful of raspberries to taste</p>
<p><strong>Method</strong></p>
<p>Pre heat your waffle maker/pan.</p>
<p>Pop your banana into a bowl and mash. Then add the eggs and beat everything well together. Then add the cinnamon and mix again.</p>
<p>Pop the mixture onto the grill plates, close the lid and leave for between 8 and 10 minutes.</p>
<p>Take out and serve with natural yoghurt and raspberries (or which ever fruit you fancy).</p>

										<content:encoded><![CDATA[<p style="text-align: left;">I love a mince pie: they are one of my favourite treats of the festive season but, given the number of calories in a single one, they aren’t something I can indulge in as much as I’d like to. This low-calorie alternative is the perfect way to curb the craving. Crunchy on the outside, with a lovely delicate burst of flavour, these mince bites are really simple to make and use only a few ingredients – perfect to take along to a buffet to give yourself a low-calorie option for dessert.</p>

<p style="text-align: left;"><b>POINTS AND NUTRITIONAL INFORMATION</b></p>
<p><em>Makes 24 bites &#8211; per bite = 5 points or 109 cals, 1.1g fat, 21.7g carbs, 1.1g protein</em></p>
<p><strong>Ingredients</strong></p>
<p>3 tsp light butter</p>
<p>1600g jar of mincemeat</p>
<p>6 sheets of filo pastry (U use a pack of Jus-Rol Filo Pastry)</p>
<p>1 tsp icing sugar</p>
<p>Low calorie cooking spray</p>
<p><strong>Method</strong></p>
<ol>
<li>Preheat the oven to 180°C (fan).</li>
<li>Melt the butter in a small bowl.</li>
<li>Put two sheets of pastry on top of each other and, using a knife, lightly score and cut the sheets into eight even squares.</li>
<li>In the middle of each square, pop a heaped teaspoon of mincemeat, then, using a pastry brush, brush a little butter around the edge of each square.</li>
<li>Fold the two opposite corners of each square in on the filling and then the two other corners. Bunch together to make a little parcel and pop them onto a lined baking tray.</li>
<li>Repeat with the next two sheets of pastry and, once the parcels are complete, repeat again with the last two sheets of pastry.</li>
<li>Spray with low-calorie cooking spray and pop in the oven for 10–12 minutes until golden. Finish with a dusting of icing sugar.</li>

I like to serve this with a splash of cream but if you prefer, you could serve with ice cream – just be sure to amend the calories to suit. I’ve stuck to the one fruit here, but the recipe is also delicious with raspberries added to the apple mix.</p>

<p><strong>POINTS AND NUTRITIONAL INFORMATION</strong></p>
<p><em>Serves 2 &#8211; per serving = 4 points or 231 cals, 7.3g fat, 23.0g carbs, 12.2g protein</em></p>
<p><strong>Ingredients</strong></p>
<p>2 x large Bramley apples, peeled, cored and roughly diced</p>
<p>1 tbsp powdered sweetener</p>
<p>1 tsp ground cinnamon</p>
<p>Good grating of nutmeg</p>
<p>Zest of 1 lemon</p>
<p>2 low calorie tortilla wraps</p>
<p>1 egg white</p>
<p><strong>Serving Suggestions</strong></p>
<p>Dusting of icing sugar</p>
<p>10 strawberries, diced</p>
<p>Juice of 1/2 lemon</p>
<p>2 tbsp (30ml) light single cream (I use Elmlea)</p>
<p><strong>Method</strong></p>
<ol>
<li>Preheat the oven to 180°C (fan).</li>
<li>Put the apple, sweetener, cinnamon, nutmeg and lemon zest in a pan with 50ml water, bring to a medium heat and simmer for 5–7 minutes until the apples have softened. You want it so the apples are soft but still hold their shape. Remove from the hob and cool for 5 minutes.</li>
<li>Next, take one wrap and add half the apple filling down the centre lengthways, forming a narrow ‘sausage’ of apple filling. Leave plenty of the wrap exposed on either side of the mixture. You don’t want to overfill it or it will get rather messy!</li>
<li>Wrap the strudel like you would a burrito – fold the top and bottom in first and then wrap over the left side and roll. Pop a little egg white at each end and nip the ends together so the apple mixture doesn’t ooze out. Repeat with the second wrap.</li>
<li>Line a baking tray with baking paper. Add each wrap to the tray with the end of the wrap underneath. Brush the top of the wrap with a little more egg white and pop in the oven for 20–25 minutes until the top is nice and golden but the wrap is still soft and pastry-like.</li>
<li>Remove from the oven and then slice each wrap in half. Serve topped with a dusting of icing sugar, strawberries, a squeeze of lemon and cream.</li>
