Chipotle Chicken and Avocado Salad – 6sp
I have a salad nearly every day for my packed lunch at work and its one of my favourite parts of the day. I love that you can create low point, delicious dressings which totally change the flavour of the regular salad ingredients. This one is another delicious one and really simple to put together.
Ingredients
Serves 1 = 6sp (previously 6pp) each
For the salad
Handful of cherry tomatoes, halved
½ pepper, deseeded and diced
2 inch chunk cucumber, diced
¼ red onion, diced
Couple of slices of pickled beetroot, sliced
Tablespoon pickled red cabbage (optional)
Couple of jalapenos, diced (optional)
Half a small avocado (60g), peeled and sliced
Handful of salad leaves
Fresh coriander, chopped, to taste
50g roasted chicken, light meat, shredded
Dressing
1 tbsp half fat crème fraiche
¼ tsp chipotle paste
¼ tsp smoked paprika
Juice of half a lime
Salt and pepper to taste
Method
Mix the dressing ingredients together in a small bowl.
In a large bowl, toss all of the salad ingredients together. Pour on the dressing, toss and serve.
