I get lots of folk who are doing Weight Watchers often saying that they struggle to find low pro point, filling but tasty lunches. As you all probably know, I’m a huge salad fan and this is one of the regulars in my repertoire. As it’s so filling, it usually stops me fancying an afternoon snack later on in the day! I use Aldi’s cous cous as it’s the tastiest one I have had and is only 39p per pack (each pack does two lunches too!). I vary the flavours between the spicy and the lemon and coriander but both work nicely with the recipe below. I usually make two portions in one go so I don’t have to be organised two days in a row.

Ingredients

Serves 2 = 5sp per serving (Flex)

1/2 Pack of Cous Cous (50g dried)

40g Reduced Fat Houmous (I used Sainsbury’s Be Good to Yourself which is 2sp for 40g)

100 g Wafer Thin Ham

Handful of baby tomatoes, halved

Wedge of cucumber, diced

1/2 red onion, sliced

Salad pepper, sliced

Mixed Salad Leaves

Dash of balsamic vinegar

1 tbsp picked red cabbage

Salt and Pepper

Method

Prepare cous cous.

Meanwhile chops all vegetables and pop in a large bowl. Add the balsamic and red cabbage.

Once cous cous is cooked add to the bowl.

Rip up your wafer thin ham into smallish sized pieces and scatter over cous cous and salad mix.

Pop into a bowl and top with the houmous (or toss through).

Season with salt and pepper and a squirt of lemon if you fancy!

Enjoy!

The post Ham and Houmous Salad with Cous Cous – 5sp first appeared on Slimming Kitchen Secrets.

A few years back a friend and I went inter railing around Europe and as a result spent a lot of time throwing together lovely little picnics. This was one of our favourites lunches while we were away, and with the lovely weather at the moment I have been craving this summery treat. The only problem was that on our travels, when my waist line didn’t bother me (even though it should have!!), we had it with fresh baguettes, lots of cream cheese and fresh Italian pesto and a huge packet of crisps. This certainly would not be pro point friendly and so today, still craving away, I decided to see if I could come up with a lower pro point alternative that was still as filling and tasty and I have to say it was gorgeous! It tasted so fresh and juicy I could eat it every day for a week!

Ingredients

Serves 1 =7sp (Flex)

1 x Multiseed Wrap

25g extra light cream cheese

1 teaspoon of green pesto

2 slices of chorizo

Handful of tomatoes, diced

Slice of cucumber, diced

1/4 pepper, deseeded and finely diced

Dash of balsamic vinegar

Handful of salad leaves or iceberg lettuce, shredded

Method

Spread half the cream cheese and pesto onto one side of the wrap. In a bowl pop the other half of the cream cheese and pesto, balsamic, a splash of water and a little salt and pepper and give a good mix. Add the chorizo, tomatoes, cucumber and peppers to the bowl and mix. Then pop a few leaves inside the wrap, top with your dressed chorizo salad and wrap up.

Enjoy!!

The post Summer Chorizo Salad Wrap – 7sp first appeared on Slimming Kitchen Secrets.
