I get lots of folk who are doing Weight Watchers often saying that they struggle to find low pro point, filling but tasty lunches. As you all probably know, I’m a huge salad fan and this is one of the regulars in my repertoire. As it’s so filling, it usually stops me fancying an afternoon snack later on in the day! I use Aldi’s cous cous as it’s the tastiest one I have had and is only 39p per pack (each pack does two lunches too!). I vary the flavours between the spicy and the lemon and coriander but both work nicely with the recipe below. I usually make two portions in one go so I don’t have to be organised two days in a row.

Ingredients

Serves 2 = 5sp per serving (Flex)

1/2 Pack of Cous Cous (50g dried)

40g Reduced Fat Houmous (I used Sainsbury’s Be Good to Yourself which is 2sp for 40g)

100 g Wafer Thin Ham

Handful of baby tomatoes, halved

Wedge of cucumber, diced

1/2 red onion, sliced

Salad pepper, sliced

Mixed Salad Leaves

Dash of balsamic vinegar

1 tbsp picked red cabbage

Salt and Pepper

Method

Prepare cous cous.

Meanwhile chops all vegetables and pop in a large bowl. Add the balsamic and red cabbage.

Once cous cous is cooked add to the bowl.

Rip up your wafer thin ham into smallish sized pieces and scatter over cous cous and salad mix.

Pop into a bowl and top with the houmous (or toss through).

Season with salt and pepper and a squirt of lemon if you fancy!

Enjoy!

The post Ham and Houmous Salad with Cous Cous – 5sp first appeared on Slimming Kitchen Secrets.

In my quest to try out some new lunch ideas I thought I would give bulgur wheat a go. I made this recipe the night before and left it in the fridge overnight and it was absolutely delicious! Really easy to put together and the bulgur wheat makes a nice change to cous cous!

Method

Serves 1 = 5sp (previously 5pp) each

40g Bulgur Wheat, dried

½ teaspoon cumin, dried

30g half fat feta (I use aldi’s greek style salad cheese as its really low in points!)

Handful of cherry tomatoes, quartered

1/8 of red onion, finely diced

Half a pepper, finely diced

Finely chopped mint and/or parsley (or basil even!)

Juice of ½ of a lemon/lime

Method

Cook your bulgur wheat according to the packet instructions. Mine need to be boiled for 15 minutes and left to stand for 10 minutes. Put your cumin in with the bulgur wheat before you boil it. Meanwhile chop up the rest of your ingredients, combine everything in a bowl, add in the bulgur wheat once cooked and finally mix in your lemon/lime juice. Serve with a handful of salad leaves or a pitta bread if you fancy!

Enjoy!

The post Bulgur Wheat and Feta Salad – Only 5sp first appeared on Slimming Kitchen Secrets.
