<p>Since I posted it again last night I’ve had so many messages asking for the recipe so you can make it tonight so your wish is my command!</p>

<p>This is a really quick and easy chicken recipe which has a huge flavour payoff. The chicken is the star of the show so you can accompany it with whatever you fancy. I like to serve it with a flatbread, lettuce and a chopped tomato, cucumber and red onion salad. The nutritional information below is for the chicken skewers so make sure to add your chosen accompaniments separately.</p>



<p>You could also make this with chicken breast if you prefer it, it only saves around 30 cals per serving, I just prefer the juiciness of the thigh!</p>



<p>I like to use the smaller metal skewers for this as the cook the chicken from the inside too. If you don’t have them, wooden will do, just be sure to soak them in water before cooking so they don’t burn.</p>



<p><strong>WW POINTS AND NUTRITIONAL INFORMATION</strong></p>



<p><em>Serves 4 &#8211; per serving = 340cals, 29g fat, 2.9g carbs, 37g protein</em></p>



<p><strong>INGREDIENTS</strong></p>



<p><em>For the chicken</em></p>



<ul class="wp-block-list">
<li>750g boneless chicken thigh, raw and cut into thick strips</li>



<li>1 tsp olive oil</li>



<li>1 tbsp paprika</li>



<li>1 tsp each garlic powder and salt</li>



<li>1/4 tsp each cayenne pepper and onion powder</li>
</ul>



<p><em>For the garlic butter</em></p>



<ul class="wp-block-list">
<li>50g light lurpack</li>



<li>3 cloves of garlic, peeled and grated</li>



<li>Large handful of fresh parsley, finely chopped</li>



<li>30g Parmesan, finely grated (keep a little back to dress at the end)</li>



<li>Salt and black pepper</li>
</ul>



<p><em>To accompany</em> &#8211; <em>suggestions</em></p>



<ul class="wp-block-list">
<li>Head of lettuce, shredded and washed</li>



<li>Handful cherry tomatoes, quartered</li>



<li>1/2 cucumber, diced</li>



<li>1/4 red onion, peeled and finely chopped</li>



<li>1 tsp white wine vinegar</li>



<li>Garlic mayo (light mayo mixed with a small grated garlic clove and pinch of oregano)</li>



<li>Flatbread (I like the deli kitchen flatbreads as they are lovely and soft and wrap nicely around the chicken).</li>
</ul>



<p><strong><strong>METHOD</strong></strong></p>



<ol class="wp-block-list">
<li>Take a large bowl and add the chicken, olive oil, paprika, garlic powder, salt, cayenne pepper and onion powder. Mix so the chicken is well coated, cover and pop in the fridge to marinate for at least an hour (ideally overnight).</li>



<li>Take the chicken out the fridge. Get four small metal skewers ready. Thread the chicken onto the skewers, folding each strip in half before sliding on.</li>



<li>Pop in the air fryer and cook for 10 mins at 180c.</li>



<li>In a small microwaveable bowl add the butter, grated garlic, parsley, Parmesan, salt and pepper. Microwave for 30 seconds until loose and creamy.</li>



<li>After 10 minutes, turn the skewers over and baste with a 1/3 of the garlic butter. Cook for another 5 minutes then turn the chicken again, and baste with the another 1/3 of the mixture. Cook for another five minutes. Baste for a final time and cook for a further 2-3 minutes until cooked through.</li>



<li>Remove the chicken from the air fryer, remove the skewer and add to the plate. Finish with a final sprinkle of Parmesan.</li>



<li>While the chicken is cooking get the salad ready. Chop the lettuce and pop into one bowl and then chop your onion, tomato and cucumber, add to another bowl and splash with 1 tsp white wine vinegar. Season with salt and pepper.</li>



<li>Warm the flatbreads in the air fryer for 2-3 minutes. Serve your preferred way. I like to coat the flatbread in garlic mayo then fill with chicken and salad veggies. If you like it spicy you could add some jalapeños or sriracha.</li>
</ol>

										<content:encoded><![CDATA[<p>Chicken and bacon are two things I have leftover in the fridge consistently so a little chicken Caesar is often on the cards. And let’s be honest, with a nice cold glass of wine, what better summer tea could you want? Turning it into a little pasta salad was a no brainer to make it more filling too &#8211; a lovely little flexible recipe which you can have as a salad or pasta salad depending on how hungry you are. </p>

<p>I’ve tried many different combos for my Ceaser dressing and this one (which uses anchovies) is my favourite. Creamy and a little bit tangy, it goes so nicely with crunchy lettuce and juicy chicken. If you don’t like anchovies, use a little extra of Worcestershire sauce instead (it’s got anchovies in it). The anchovies do give the dressing a gorgeous flavour though (and don’t taste at all fishy). </p>

<p>A traditional Caesar doesn’t have bacon but I like to add a little (in almost crumb form) for an extra burst of saltiness/flavour. Similarly a regular Caesar doesn’t usually have veggies like tomatoes and cucumber but I like to add to bulk out the dish with low calorie, fresh extras. </p>



<p>If you fancy making this as a leafy salad rather than a pasta salad skip the pasta step below.&nbsp;</p>

<p>The dressing makes 4 servings, all of which go into the pasta salad. If you are making the pastaless version, you will likely only need 2 servings of the dressing. The left overs will keep in the fridge, covered, for 3 days.&nbsp;</p>



<p><strong>WW POINTS AND NUTRITIONAL INFORMATION</strong></p>



<p><em>Serves 4 &#8211; per serving = 10 points or 408 cals, 9.4g fat, 45.3g carbs, 36.8g protein   </em></p>



<p><strong>For the dressing (makes 4 servings) </strong></p>



<p>1 clove of garlic, peeled&nbsp;</p>



<p>1 anchovy&nbsp;</p>



<p>1/2 tsp each Dijon mustard and Worcestershire sauce&nbsp;</p>



<p>Juice of 1/2 lemon&nbsp;</p>



<p>100g extra light mayo</p>



<p>1 tsp extra virgin olive oil&nbsp;</p>



<p>20g Parmesan&nbsp;</p>



<p>Salt and back pepper</p>



<p>For the pasta salad&nbsp;</p>



<p>1 tsp olive oil</p>



<p>400g chicken breast, raw</p>



<p>2 slices of back bacon, fat removed&nbsp;</p>



<p>1 x 30g pack of garlic and herb croutons, broken into smaller pieces (I used a rolling pin while the croutons were still in the bag)</p>



<p>2 heads of romaine lettuce, finely sliced&nbsp;</p>



<p>200g cooked pasta (shape of your choice, I like rigatoni)&nbsp;</p>



<p><strong>Optional </strong></p>



<p>Large handful of cherry tomatoes, quartered&nbsp;</p>



<p>1/2 cucumber, finely diced&nbsp;</p>



<p><strong><strong>METHOD</strong></strong></p>



<ol class="wp-block-list">
<li>Pop the pasta on to cook. </li>



<li>Roughly chop the garlic and anchovy and pop into a pestle and mortar. Pound until both have turned into a paste. If the mortar is big enough you can add the rest of the dressing ingredients to it and mix well. If not, transfer to a bowl before you add the rest of the dressing ingredients and mix well. Add a splash of water to loosen until it is the consistency of double cream/yoghurt. Cover and pop in the fridge til everything else is ready.</li>



<li>Take the chicken, pop between two sides of baking paper and bash with a meat mallet or rolling pin to flatten (around 1cm thick). Season with salt and pepper. </li>



<li>Add 1 tsp olive oil to a large frying pan and bring to a medium heat. Add the chicken and cook for 3-4 minutes then flip and cook further a further 3-4 minutes on the other side (or until cooked through and it is nice and golden on the outside). Remove from the pan and chop into bite size chunks (or slice and reserve for the top if you prefer). </li>



<li>Take the chicken out the pan and add the bacon. Fry until crispy. Remove from the pan and pop onto a sheet of kitchen paper to absorb any excess oil. Then finely chop to a crumb.</li>



<li>Now you are ready to assemble. Into a large bowl add the pasta, tomatoes and cucumber (if having), chicken, bacon, croutons and lettuce. Add the dressing and toss everything together until well combined.</li>



<li>Pop into two large bowls and enjoy!</li>

										<content:encoded><![CDATA[<p>We love a good Chinese takeaway but they are often one of the worst culprits for being sky high in both points and calories. If you are looking for a good healthy alternative, my twist on this classic Chinese dish tastes just as good without any of the guilt. The recipe actually came about one night when <span id="more-5039"></span>I had some leftover chicken and I was whipping together something as quickly as possible for my little boy’s tea. My hubbie tasted it and wondered why we weren’t having the same so I pulled together a more adult version of the same recipe and here it is!! ( Note &#8211; the baby version used roasted chicken and pre cooked packet basmati rice – both good alternative if you have leftovers or are a little short on time. It also didn’t use any of the hotter chilli flavours).</p>

<p><em>Serves 4 &#8211; per serving = 10 points or 456 cals 6.8g fat, 61.6g carbs, 40.2g protein</em></p>
<h4><strong>INGREDIENTS</strong></h4>
<p>240g basmati rice</p>
<p>2 tsp sesame oil</p>
<p>500g chicken breast, raw, cut into bit sized chunks</p>
<p>1 tsp each of curry powder and Chinese 5 spice</p>
<p>2 tbsp each dark soy sauce, light soy sauce and oyster sauce</p>
<p>½ tsp sugar</p>
<p>Pinch white pepper</p>
<p>2 eggs</p>
<p>1 onion, peeled and finely diced</p>
<p>4 spring onions, sliced</p>
<p>1 pepper, deseeded and diced</p>
<p>80g frozen peas</p>
<p>3 cloves of garlic, finely chopped</p>
<p>Low calorie cooking spray</p>
<p>Salt and white pepper</p>
<h4><strong>METHOD</strong></h4>
<ol>
<li>Pop the rice on to cook.</li>
<li>Pour 1 teaspoon of the sesame oil into a large pan or wok, heat and then add the chicken. Season with salt and a little white pepper and cook for 5–6 minutes until the chicken is cooked through. Remove the chicken from the pan and set aside on a plate.</li>
<li>While the chicken is cooking, put the curry powder, 5-spice, soy sauces, oyster sauce, sugar, a little white pepper and 3–4 tablespoons of water in a bowl. Stir to combine.</li>
<li>Next, break the eggs into a cup, whisk up and then put in a smaller pan with a little low-calorie cooking spray. Scramble for a minute or two (you want the eggs so they are just cooked) and then remove from the heat, setting to one side.</li>
<li>Add the remaining sesame oil to the wok (the same pan in which you cooked the chicken) and add the onion, the white parts of the spring onion, the pepper, peas and garlic. Fry for 5–6 minutes until the onion starts to soften and then you can begin adding everything back to the pan.</li>
<li>First add the cooked and fluffed rice, then toss through the vegetables, making sure the rice is nicely broken up. When the rice is piping hot and mixed into the veggies, pour the sauce into the pan, stirring until it evenly coats the rice.</li>
<li>Next, add the chicken back to the pan, fry for another minute, and then add the eggs and remaining green parts of the spring onions to the pan. Toss everything together, taste and season with more soy and white pepper if needed.</li>

Tarragon is not something usually included in the dish but it’s a lovely addition to lift the flavour and add an element of freshness.</p>

<p>Before you start making the sauce, decide which accompaniment you fancy. I’ve made this with several options but my favourites are roast potatoes, pan fried new potatoes (boil potatoes til soft, smash a little and then crisp up in a frying pan) or rice. I usually serve with green beans (boiled for a few minutes and then finished in a 1sp of light butter, lemon juice and salt and pepper) or asparagus. All make for a lovely dish that feels like a real indulgence. Just remember to add the extra points for whichever accompaniment you prefer (I usually have 6sps worth of potatoes or rice).</p>
<p><strong>SMART POINTS AND NUTRITIONAL INFORMATION</strong></p>
<p>Serves 4 &#8211; 3sp on BLUE and PUPLE, 5sp on GREEN for the chicken in tarragon sauce</p>
<p>Per serving – 330 calories, Fat 5.1g, Carbs 10.4g, Protein 64.8g</p>
<h4><strong>INGREDIENTS</strong></h4>
<p>4 x chicken breasts (around 200g raw weight per breast)</p>
<p>1 large leek, washed, woody end removed and sliced into thin rounds</p>
<p>3 cloves of garlic, peeled and finely chopped</p>
<p>300g chestnut mushrooms, cleaned and sliced</p>
<p>1 heaped tbsp of plain flour</p>
<p>125ml white wine</p>
<p>2 tsp Dijon mustard</p>
<p>500ml chicken stock (made of 1 chicken stock cube)</p>
<p>4 tbsp light crème fraiche</p>
<p>Few sprigs of fresh tarragon (one left whole and 2 chopped finely)</p>
<h4><strong>METHOD</strong></h4>
<p><em>Note &#8211; Before you start cooking this one, have a read of the short blurb above so you can choose your accompaniment and pop it on at the right time whilst cooking the sauce.</em></p>
<ol>
<li>Season the chicken breasts with salt and black pepper. Take a large saucepan or frying pan, spray with 1kal and on a medium/high heat fry the chicken breasts for 2-3 minutes on each side until browned. The chicken doesn’t need to be cooked through at this point, you just want some colour on the meat. Remove the chicken from the pan and pop to one side.</li>
<li>In the same pan, spray again with 1kal and add the leek. Season with salt and black pepper and fry for 3-4 minutes until the leek starts to soften. Add a little water if the pan starts to get dry.</li>
<li>Add the garlic and mushrooms and fry for 2 minutes.</li>
<li>Finally add the plain flour, stir through and fry for another minute.</li>
<li>Next add the white wine, simmer for a few minutes until reduced by half and then add the chicken stock, the mustard and the whole sprig of tarragon. Add the chicken back to the pan. Bring to the boil and then reduce to a simmer.</li>
<li>Simmer for 20 minutes until the liquid is reduced slightly and has started to thicken.</li>
<li>Reduce the heat to low/medium and then add the crème fraiche. Stir through until well combined, simmer for another few minutes and then remove from the heat.</li>
<li>Finally stir through the fresh tarragon. Taste and season with more salt and pepper if required.</li>
<li>Serve with the accompaniment of your choice.</li>
<li>Enjoy!</li>

<p>You can also add chicken breast to the recipe below without adding any extra smartpoints but this changes the method of cooking the skewers. Instead of grilling them, as set out in the method below, pre heat your oven to 180c, spray with 1kal, season and cook on a baking tray for 30-35 minutes (until the chicken is cooked through).</p>
<p><u>Souvlaki Style Chorizo and Halloumi Kebabs</u></p>
<p><em>Serves 2 = 11sp per serving</em></p>
<p><strong>Ingredients</strong></p>
<p>50g chorizo, sliced into 8 rounds</p>
<p>100g light halloumi sliced into 8 chunks</p>
<p>2 peppers, deseeded and sliced into chunks</p>
<p>1 large red onion (or 2 small), peeled, top and bottom cut off and quartered</p>
<p>Handful of cherry tomatoes (optional)</p>
<p>Juice of 1 lemon</p>
<p>½ tsp each of paprika and oregano</p>
<p>1 tsp honey</p>
<p>Salt and pepper</p>
<p>250g new potatoes (should be around 6 new potatoes, 3 each)</p>
<p>Large lettuce (of your choice) to be used as ‘wraps’ – I’ve used romaine, iceberg and Chinese</p>
<p><strong>Method</strong></p>
<p>Pre heat the oven to 180c.</p>
<p>To begin, place 4 skewers in clean sink with cold water and soak for half an hour (this will prevent the skewers burning when you cook the kebabs).</p>
<p>Next prepare the new potatoes. Take each potato in turn, pop onto a wooden spoon and starting at one side cut across their width at small intervals to create the ‘hassleback’ effect. The spoon will stop you cutting all the way through the potato.  Pop onto a baking tray, spray with 1kal and sprinkle over a pinch of oregano, paprika, salt and pepper. Pop into the oven for 40-50 minutes until golden and cooked through.</p>
<p>Whilst the potatoes are cooking you can assemble the kebabs. To each skewer add a piece of pepper, chorizo, red onion, halloumi, tomato (if using) and then repeat. Finish the skewer with a final piece of pepper and red onion.  You can either pop the skewers in the oven for 10-15 minutes (to cook with the potatoes) or pop under a hot grill for 10 minutes (turning regularly) until the halloumi starts to turn a lovely golden colour.</p>
<p>Mix the juice of 1 lemon with ½ tsp paprika and ½ tsp oregano, along with 1 tsp honey and salt and pepper.</p>
<p>Add two washed large lettuce leaves to each plate. Remove the skewers from the oven and pop onto your plates on top of the lettuce leaves (you should have two skewers per person). Drizzle over the honey lemon dressing.</p>
<p>Finally pop the potatoes onto the plate.</p>
<p>Enjoy!</p>

Keen to make my own healthier version, I ditched the deep frying and went for a much healthier griddle instead.</p>

<p>The result was delicious. The slaw in particular has the most delicious flavour and can also be added to any salad for lunches during the week. Give it a whirl, you won&#8217;t be disappointed.</p>

<p><strong>Spicy Chicken Burgers with Gochujung Chilli Slaw</strong></p>
<p><em>Serves 2 = 4sp per serving (Flex)</em></p>
<p><span style="text-decoration: underline;">Ingredients</span></p>
<p><em>For the chicken &#8211; 0sp per person</em></p>
<p>2 x 200g chicken breasts, flattened with a meat mallet or rolling pin</p>
<p>2 tsp Korean Red Pepper Chilli Powder (or crushed chillies)</p>
<p>1 lemon, halved</p>
<p><em>For the slaw &#8211; 1sp per person</em></p>
<p>2 tbsp lightest mayonnaise</p>
<p>1 tsp gochujang chilli paste</p>
<p>½ tsp white wine vinegar</p>
<p>Pinch of garlic granules</p>
<p>½ red onion, peeled and finely sliced</p>
<p>1 large carrot, peeled and finely sliced</p>
<p>¼ red or white cabbage, finely sliced</p>
<p><em>To accompany</em></p>
<p>2 x Warburton’s thins (3sp per thin)</p>
<p>Mixed Salad Leaves</p>
<p>2 x mini corn on the cob (I use the mini Tesco ones which are 89g (0sp each)</p>
<p>BNS chips</p>
<p><strong>Method</strong></p>
<p>First make the slaw – pop the mayo, chilli paste, white wine vinegar and garlic granules in a big bowl and mix together. Then add the onion, carrot and cabbage and combine everything together. Pop in the fridge until you are ready to serve.</p>
<p>Next, pop each chicken breast in between two sides of baking paper and with a meat mallet or rolling pin, beat to 1/2 cm thick. Then sprinkle each side with the red pepper powder and season with salt and pepper.</p>
<p>Spray a frying pan or griddle pan with 1kal and then fry the chicken breast on each side for 4-5 minutes until cooked through. As you are cooking the chicken, squeeze over the juice of the lemon to keep it nice and moist.</p>
<p>Pop your accompaniments on to cook and then, once readt, you can pop your burger together.</p>
<p>Lightly toast the thins and then add a little slaw, top with the burger and then a few salad leaves.</p>
<p>Serve with a mixed salad, BNS chips and corn on the cob if you fancy (the 8sp here covers you for the chicken, slaw, thin and corn on the cob!)</p>

After visiting a food festival a few weeks ago and enjoying the most delicious  Jamaican brown chicken wrap I decided to give this dish a go for myself by transforming it into a stew.</p>

<p>The result was delicious, my hubbie said this was his favourite new dish I’ve created in a while as not only is it lovely and filling but it has the most delicious deep and warm flavour. If you don’t like things too spicy, you can always use a normal chilli instead of a scotch bonnet in the marinade.</p>

<p>The ingredients list might look lengthy here but most of it will be store cupboard essentials. It’s actually very quick to put together, even quicker if you marinade the chicken the night before.</p>
<p>Make the salsa is optional so feel free to leave it out if you are pushed for time but it really is a delicious addition to this dish, lifting the flavour and bringing an extra freshness to a warming and filling dish.</p>

<p><strong>POINTS AND NUTRITIONAL INFORMATION</strong></p>
<p><em>Serves 4 &#8211; per serving = 7 points or 473 cals, 4.3g fat, 57.2g carbs, 54.2g protein</em></p>
<p><strong>Ingredients</strong></p>
<p><em>For the marinade</em></p>
<p>2 spring onions, roughly chopped</p>
<p>1 scotch bonnet (or if you don’t like it too hot a normal red chilli), roughly chopped</p>
<p>2 cloves of garlic, peeled</p>
<p>1 tbsp ground all spice</p>
<p>1 tsp each dried thyme, ground cinnamon and nutmeg</p>
<p>¼ tsp each cayenne pepper and white pepper</p>
<p>2 tbsp dark soy sauce</p>
<p>Juice of 1 lime</p>
<p><em>For the stew </em></p>
<p>800g (4 x 200g) chicken breast, raw</p>
<p>1 tsp olive oil</p>
<p>6 spring onions, finely sliced</p>
<p>1 large white onion, peeled and finely sliced</p>
<p>2 peppers, deseeded and finely sliced</p>
<p>2 garlic cloves, peeled and finely chopped</p>
<p>1 tbsp tomato puree</p>
<p>Dash of Tabasco</p>
<p>2 bay leaves</p>
<p>1 chicken stock cube made with 500ml boiling water</p>
<p>½ tbsp honey</p>
<p>2 tsp cornflour</p>
<p>Juice of 1/2 lime</p>
<p><em>For the rice</em></p>
<p>200g long-grain rice</p>
<p>80g frozen peas</p>
<p><strong>Method</strong></p>
<ol>
<li>For the marinade, pop all the ingredients in a food processor and blitz until well combined.</li>
<li>Pop the whole chicken breasts into a large bowl, pour over the marinade, coat the chicken well, and then leave to marinate for at least 30 minutes (or overnight if you are prepared enough).</li>
<li>Once marinated, take a large frying pan, add the olive oil and bring the pan to a high heat (if you are cooking in two batches, add half the oil with the first batch of chicken and half with the second).</li>
<li>Remove the chicken from the bowl with some tongs, reserving the rest of the marinade in the bowl, and then add the chicken to the pan. Brown on one side for 5 minutes and then turn over and brown for 5 minutes on the other side. You want to let the chicken char nicely as this gives the stew the lovely brown colour. You might need to do this in batches as it’s likely that all of the chicken won’t fit into the pan in one layer at once and if you overload the pan, the chicken won’t brown. Spray with low-calorie cooking spray as you fry the chicken to keep the pan lubricated.</li>
<li>Once the first batch is browned, remove from the pan and pop to one side on a plate and then repeat with the second batch until all the chicken is sealed (it doesn’t need to be cooked through at this point).</li>
<li>Next add the spring onion, onion, peppers and garlic to the now empty frying pan, season with salt and pepper, and then fry for 6–7 minutes until the onion starts to soften. Add the tomato purée, Tabasco and bay leaves, fry for another minute, and then add the chicken stock and honey.</li>
<li>Mix the cornflour with a few drops of cold water to make a paste, add to the sauce with the reserved marinade, stir, and then add the seared chicken breasts back to the pan, making sure that the sauce covers them.</li>
<li>Bring to the boil and then lower the heat to a simmer for 30 minutes until the sauce starts to reduce and thicken and you’ve got a nice brown sauce/gravy consistency.</li>
<li>Pop the rice on to cook while the stew is bubbling away. Five minutes before it’s cooked, add the frozen peas.</li>
<li>After 30 minutes and once the chicken is cooked through, check the stew for seasoning and add more if required. Remove from the heat and then add the lime juice. You can either serve the chicken breasts whole with the sauce or shred them into the sauce. Serve the stew on a bed of rice and peas.</li>
</ol>
<p>If you fancy the salsa, simply combine the ingredients below:</p>
<p><em>For the salsa – 0s points per person</em></p>
<p>1 red onion, peeled and finely chopped</p>

										<content:encoded><![CDATA[<p>A Taquito is something I had never tasted or even heard of before I went visited Mexico and since it has been a whole year since we jetted off, I thought it was time to come up with another recipe inspired by my time there.</p>
<p>A Taquito is simply a rolled up, stuffed tortilla. Usually fried, these lovely creations are rolled tighter and so are thinner than an enchilada, and the top is not covered in sauce in the same way an enchilada would be.</p>

<p>When thinking about what to fill my Taquitos with, I thought I would get my other favourite find of the Mexico trip involved, Frank’s Red Hot Buffalo Sauce. I first tried this over there on chicken wings and many of you may have seen it used in my <a href="https://skinnykitchensecrets.com/2017/01/26/buffalo-chicken-soup-4sp/">Buffalo Chicken Soup recipe</a>. It really is the most delightful flavour. Spicy and tangy, it makes for a real taste sensation when added to chicken.</p>

<p>The filling I’ve created below is truly delicious. Tangy, a little cheesy and stuff with veggies, this is a dish that will keep you full for hours. I served mine with BNS chips (0sp) however I was so full from two Taquito&#8217;s that I probably wouldn’t bother with them next time (or I would have one Taquito with the chips).</p>

<p>I’ve used Sainsbury’s Be Good to Yourself Blue Cheese Dressing in this recipe (instead of the more points heavy crumbled Blue Cheese). If you can’t get a hold of it, or find a light equivalent somewhere else, just leave it out. The other flavours in the dish will more than make up for it.</p>
<p><u>Buffalo Chicken Taquitos</u></p>
<p><em>Makes 8 Taquitos &#8211; serves 4 (2 taquitos per person) &#8211; 12sp per serving (including salad and soured cream to finish)(Flex)</em></p>
<p><strong>Ingredients</strong></p>
<p><em>For the filling </em></p>
<p>400g roast chicken, white breast meat, shredded</p>
<p>100g lightest cream cheese</p>
<p>4 tbsp Frank’s Red Hot Buffalo Sauce</p>
<p>2 tbsp Sainsbury’s Be Good to Yourself Blue Cheese Dressing (or other supermarket light equivalent)</p>
<p>Juice of 1/2 lime</p>
<p>100g sweetcorn (drained)</p>
<p>4 x spring onions, finely sliced</p>
<p>Half a bag of spinach, shredded</p>
<p>Large handful of fresh coriander, chopped</p>
<p><em>For the Taquito</em></p>
<p>8 x Weight Watchers Tortillas (these are 4sp each so if you can’t find these, any other 4sp equivalent will do, Tesco’s and Sainsbury&#8217;s are also 4sp).</p>
<p><em>For the salad &#8211; serves 4 = 0sp per person</em></p>
<p>¼ iceberg lettuce, shredded</p>
<p>Large handful of spinach, shredded</p>
<p>2 spring onions, sliced</p>
<p>1 tbsp sweetcorn</p>

<p><strong>Method</strong></p>
<p>Pre heat the oven to 180c.</p>
<p>Take a large bowl and add the cream cheese, buffalo sauce, blue cheese dressing and lime juice. Whisk together until smooth and then season with salt and pepper to taste. Add the rest of the filling ingredients and fold everything together. Taste again and check/adjust the seasoning.</p>
<p>Take a large baking dish and spray with low cal cooking spray. Divide the mixture roughly into 8 in the bowl and then, one tortilla at a time, add the filling and roll longways so that they are nice and tight and relatively thin. Pop into the baking dish and repeat with the other 7 tortillas. Spray the top of the wraps with low cal cooking spray and then pop in the oven for 20-30 minutes (until the wraps have started to brown on top).</p>
<p>While the Taquitos are cooking you can also roast some butternut squash chips (pop these in 10-15 minutes before the Taquitos) if you fancy them.</p>
<p>I also served with a side salad which included iceberg lettuce, shredded spinach, a couple of chopped spring onions and a tablespoon of sweetcorn tossed in a tbsp. of the blue cheese dressing ( the same one used in the main recipe) and some lime juice.</p>
<p>Once cooked, remove the Taquito’s from the oven and finish with a drizzle of Buffalo Sauce, light soured cream and fresh coriander.</p>
<p>Serve with the salad and BNS if you are having them alongside a tbsp. lightest soured cream per person.</p>

										<content:encoded><![CDATA[<p>Gnocchi is a great store cupboard essential to have in so that you can whip up a delicious home made tea really quickly and simply. We often have it with a nice tomatoey sauce usually but tonight I thought I would try something different. The result was this delicious creamy baked delight.</p>
<p><span id="more-1577"></span></p>
<p>The sauce feels really luxurious even though the whole thing is only 11sp and the kale gives it a lovely crunchy and fresh lift.</p>
<p>If you can&#8217;t get any Heck sausages, you could replace them with 350g diced chicken breast, frying as you would the sausages at the same point. This would make the dish 9sp per serving.</p>

<p><strong>Creamy Baked Chicken and Kale Gnocchi </strong></p>
<p><em>Serves 4 = 11sp per serving (Flex)</em></p>
<p><u>Ingredients</u></p>
<p>1 pack of Heck Chicken Sausages</p>
<p>½ tsp paprika and crushed chillies</p>
<p>1 large onion, finely chopped</p>
<p>2 cloves of garlic, finely chopped</p>
<p>2 peppers, deseeded and finely diced</p>
<p>1 box of chestnut mushrooms, sliced (optional)</p>
<p>1 tsp plain flour</p>
<p>1 chicken stock cube, made up with 200 ml of boiling water</p>
<p>1 tbsp sun dried tomato pesto (or any pesto you fancy)</p>
<p>100ml white wine (optional)</p>
<p>4 tsp half fat crème fraiche</p>
<p>500g bag of kale</p>
<p>500g pack of gnocchi</p>
<p>40g half fat mature cheddar, grated</p>
<p>20g parmesan, grated</p>
<p><u>Method</u></p>
<p>Preheat the oven to 180c.</p>
<p>Squeeze the sausages out of their skins and crumble into a large frying pan. Season well, add the paprika and crushed chillies and fry on a medium/high heat in 1kal for 5-6 minutes until the sausage meat starts to brown and is cooked through. Remove the sausage meat from the pan.</p>
<p>In the same pan fry the onions for 5 minutes until 1kal until they start to soften and then add the peppers, garlic and mushrooms and fry for another few minutes. Add the flour, stir through and fry for another minute.</p>
<p>Next add the stock, wine and pesto and simmer for a few minutes until the sauce starts to thicken. Add the crème fraiche and the sausages back to the pan, stir and turn the heat down to low. Continue to warm while you prepare the kale and gnocchi.</p>

<p>Fill a large pan with salted boiling water. Add the kale and simmer for 4 minutes, then add the gnocchi to the same pan and simmer for 3 minutes until the gnocchi rises to the surface. Drain the gnocchi and kale and then add the creamy sauce.</p>

<p>Tip everything into a baking dish, top with the half fat cheese and parmesan and then pop into the oven for 15 minutes to bake.</p>

<p>I&#8217;ve included a few cashew nuts in this recipe as it really gives it a nice different taste however if you don&#8217;t fancy them, just leave them out and the whole recipe becomes 8sp per person.</p>
<p><strong>Ingredients</strong></p>
<p><em>Serves 2 = 9sp per serving (Flex)</em></p>
<p><em>For the Chicken</em></p>
<p>100g cooked chicken breast, shredded</p>
<p>100ml fat free greek/natural yoghurt</p>
<p>2 tbsp curry paste (I used Patak’s chicken tikka paste)</p>
<p>Juice of half a lime</p>
<p><em>For the pizza </em></p>
<p>2 x Weight Watchers Wraps (or a Warburton’s Square Wrap)</p>
<p>4 tbsp tomato puree</p>
<p>1 green pepper, sliced</p>
<p>1 red onion, peeled and finely sliced</p>
<p>10 unsalted cashew nuts, roughly crushed (optional)</p>
<p>½ ball of light mozzarella</p>
<p><em>To finish</em></p>
<p>100ml fat free greek/natural yoghurt mixed with 1 tsp mint sauce</p>
<p>Other half of the lime above, quartered</p>
<p>Handful of coriander leaves, roughly chopped</p>
<p><strong>Method</strong></p>
<p>Preheat the oven to 180c and pop two pizza baking trays inside to warm up.</p>
<p>Add the marinade ingredients to the chicken and let marinade for a while (around 1 hour if you have time), if not, just mix together and pop to one side.</p>
<p>Take the pizza tray out the oven, spray with 1kal and pop the wrap down on the tray. Top with 2 tbsp tomato puree per wrap then scatter over the onion, peppers, cashew nuts and chicken. Evenly distribute the mozzarella and then pop in the oven for around 10 -12 minutes.</p>

<p>Remove from the oven and pop onto a plate. Top with a drizzle of the mint yoghurt, squeeze over the rest of the lime and scatter over the fresh coriander.</p>
