Loaded Sweet Potato Skins – 5sp

This is a really easy recipe that I’ve made a few times now and it always goes down an absolute storm with everyone who tries it. It’s a great accompaniment to any BBQ or a great replacement for rice if you are having chilli or BBQ chicken (or even Beer Can Chicken which is what I first made these to go with – recipe for this to follow!!).

If you don’t like your food too spicy you could always leave out the fresh red chilli and just use a pinch of cayenne pepper with the dried spices at the start.

Either way, this is a delicious side dish which feels like a real indulgence. Even my hubbie, who is not a fan of a sweet potato, loves this!!

Loaded Sweet Potato Skins – 5sp

Serves 4 people – 5sp per person (Flex)

Ingredients

450g sweet potato, sliced vertically into long slices ‘skins’ (no peeling required)

2 tsp smoked paprika

2 tsp ground coriander

40g half fat cheese, grated

2 spring onions, finely sliced

1 red chill, finely sliced

2 tbsp fresh coriander, finely chopped

2 tbsp lightest soured cream

½ tsp chipotle paste

Method

Pre heat the oven to 180c and pop a baking tray inside to warm up.

Pop the unpeeled sweet potato slices into a sauce pan and par boil in salted boiling water for 5 minutes until softened a little.

Remove the baking tray from the oven and spray with 1kal. Drain the potatoes, give a little shake and then pop straight onto the warm baking tray. Sprinkle over the smoked paprika and ground coriander and season well with salt and pepper. Spray with 1kal and then pop back in the oven for 30-40 minutes until the potato is cooked through and has started to colour a little.

Remove from the oven, top with the grated cheese and pop back in the oven for a few minutes until the cheese melts.

Remove again from the oven and pop the cooked skins onto a plate or serving board. Mix one tbsp. of the soured cream with the chipotle and drizzle over the wedges. Drizzle the other tbsp. of soured cream over the wedges plain. Top with a scattering of spring onions, red chillis and fresh coriander.

    Made this tonight but had to adapt because (a) I don’t like cheese, (b) no chipotle paste in cupboard & (c) no sour cream …………so after a little thinking I did mine without cheese and used 0% fat natural yoghurt mixed with a teaspoon of harissa paste. Wow – the texture and taste of these is fabulous and whilst my flavouring was probably slightly different to yours they were lovely. Wife loved hers as well and thought I had spent ages making the harissa / yoghurt sauce 🙂 Thank you Laura you continue to inspire me to cook low point tasty food fresh 🙂

    • Love this Graham, they sound like fab alterations, I love Harissa (quick and easy recipe is to toss it through courgette, aubergine, peppers and red onion and make a hot salad out of it drizzled with yoghurt). Wish I didn’t like cheese haha x

  • Am I missing a step, why do we need 2 baking trays in the oven?

    • I used two the first time I made this so the sweet potato was in a single even layer. One on its own is fine x

  • How do you do beer can chicken? Do you have the recipe.
