Speedy Seafood Pasta – 8sp
While we were away in Kos in the summer my friend ordered herself the most gorgeous seafood pasta, which, for the next ten minutes we all stared at in jealousy! It reminded me of this lovely easy pasta which I tried out a while ago and, having craved it continuously since we got back, it’s now a regular dish on our weekly menu! It’s so quick and easy and can be made in around 20 minutes from start to finish. It’s a nice change having seafood in a pasta and at only £2.00 for a mixed pack of seafood, its nice and cheap too!
Ingredients
Serves 2 = 8sp each (Flex)
80g Spaghetti, dried
1 large onion, chopped
1 red chilli, finely chopped (and deseeded if you don’t like it too hot)
2 garlic cloves, peeled and finely chopped
1-1.5 tsp paprika
Pinch of cayenne pepper
Pinch of chilli powder
400g tin of chopped tomatoes
100ml white wine
1/2 teaspoon of sugar
1 tablespoon tomato puree
230g pack of mixed seafood (I used Tesco cooked seafood selection)
2 tablespoons single cream
Handful of basil leaves, chopped
Method
Heat a pan of salted boiling water and cook your spaghetti according to the packet instructions.
Meanwhile, heat a pan, spray with 1kal and cook your onion, garlic and chilli over a medium heat for around 5 minutes until the onion is nice and soft. Add the paprika, a pinch of cayenne pepper and chilli powder, tomatoes, tomato purée, sugar and wine and bring to the boil.
Turn the heat down and simmer for another five minutes and stir occasionally. Stir in your seafood mix and cook for a further 3-4 minutes until the seafood is piping hot then pop in your cream to warm through.
Drain your spaghetti once cooked reserving a small splash of the pasta water and add this splash of pasta water and spaghetti to the seafood sauce mix. Give a good stir, divide between two pasta bowls, serve with a sprinkling of basil and season with a good grind of fresh black pepper.
